Title: Panfried Beef Blade Steaks - Mix & Match

Yield: 4 Servings

4 Beef blade steaks*
1/2tsSalt
1/4tsPepper
1tsOlive oil

*boneless, 3/4" thick, about 5 ounces each. Pat steaks dry with paper towels. Sprinkle salt and pepper on both sides, pressing to adhere. Heat oil in large nonstick or cast-iron skillet over high heat. Remove from heat and tilt pan to coat bottom with oil. Return to high heat, add steaks and cook 2 minutes per side. Reduce heat to medium and cook another minute per side for medium-rare, 2 minutes per side for medium-well. Remove to dinner plates or a platter.
